We source all of our ingredients from Michigan farmers and growers (with the exception of yeast, due to a lack of availability). The choice to source all of our ingredients from Michigan means a lower transportation carbon footprint, smaller and more diversified farms, increased biodiversity, and more money in our local food economy.

TRANSPORTATION

We intentionally selected a location in downtown Ann Arbor that can be easily accessed by public transportation. We also sponsor a city bike rack that sits just outside of our taproom. We offer our employees a free GoPass that provides unlimited free bus rides for downtown employees through a subsidized city program.

PRODUCT PACKAGING

In 2023 we switched from labeled cans to pre-printed cans. Labels are often made with plastic materials, as is the backing. While the aluminum cans are recyclable, the labels usually  are not. A painted aluminum can is almost infinitely recyclable. We also use one-way kegs that can be recycled by our distributor. For shipping cans directly to consumers, we use only recycled packaging materials from shipments we’ve received and community donations.

TAPROOM MATERIALS

Within our space, we strive to use as many non-disposable materials as possible - glasses, plates, mugs, silverware, growlers, howlers, bar towels. When we do have to use disposable materials, we try to source compostable options from a local distributor. We typically produce about one can of trash per week. Anything that’s recyclable is sorted prior to disposal.

EVENTs

We try to use our brick and mortar taproom to showcase as many local businesses and organizations as possible. This includes pop-ups, workshops, conferences, and public events. In the past we’ve provided space for local cycling advocacy groups, local seed sales, bike support stations, upcycled craft nights, school fundraisers, small maker workshops, mutual aid fairs, pollinator tours and more. We’ve also provided in-kind donations for events that support organizations like Leslie Science & Nature Center, Huron River Watershed Council, our local transit association, and many more.

production PACKAGING

The majority of the packaging used in our production process is reused. Honey drums are returned to beekeepers, food grade buckets are saved, glass maple syrup jugs are returned to the sugar shack, chemical containers are returned to the manufacturer. All of these are sanitized and reused.

PRODUCTion Process

Our utility management reflects our commitment to sustainability. Our HVAC is programmed to run less during non-public hours and we use on demand hot water heaters so energy isn’t used to hold hot water. We’ve converted some of our single phase motors to three-phase motors for increased efficiency. Alongside traditional kegs, we've invested in large-format stainless serving tanks that require less frequent cleaning due to their size, thus saving water. We are also continuously working to decrease the amount of chemicals used during production while still achieving the same sanitation results. We occasionally have farmers pick up spent fruit for compost or feed after its been pressed in our cellar.


Up Next

We’re always pursuing small changes in the taproom to lower our footprint, whether that’s through another local producer partnership, or by finding additional ways to reuse yet another material we come across. Some of the bigger projects we’ve started to brainstorm on are solar power for our building, carbon offsets, and some changes to our refrigeration system. Do you have additional ideas for us?
